Bringing the taste of Hawaii to Saipan

Former congressman Andrew Salas and his business partner David
Phan are bringing the taste of Hawaii to Saipan. Hawaii Bar and Grill
held its soft opening on Jan. 18 and so far, so good for the
establishment located across Hyatt Regency Saipan on Coral St. in
Garapan. “We opened Friday [Jan. 18] because we wanted to see if our
cooks learned the 'Hawaiian Preparation 101.' We wanted to make sure
they've graduated,” Salas said in jest. He said Hawaii Bar and Grill was
packed three of the first six days since the soft opening. It comfortably
seats 50 patrons. “I'm very happy that the response has been very good.
We haven't done any advertisement. We're not going to do any grand
opening-just word of mouth. It's such a small community, once they
hear something's open, they'll come,” he said. Salas said he and Phan
decided to open a Hawaiian restaurant because for an island that has
such a close affinity with the 50th State of the Union, every time he pines
for Kalua Pig or Laulau, he simply cannot find a restaurant that serves
those on Saipan. “I didn't want to open a Filipino restaurant, a Chinese
restaurant, or a Korean restaurant, because there's already a lot of them
here,” he said. “I love Filipino food, Chamorro food, I just love food, I love
to eat, but I just want to give something that no one is offering. Because
every time you ask for Hawaiian food they always bring Poki, but that's
not it.” There's another reason why Salas has such a passion for
Hawaiian food and it's something closer to his heart than his stomach.
“Hawaii is where I met my wife. To me it's a very special place. Since I
met her, I've been going to Hawaii and the food there is just awesome,”
he said. Salas enlisted the help of his in-laws from the Aloha State to
set up the menu for the new restaurants and train his cooks. Salas said
that going into the restaurant business has given him an opportunity to
extend his service to the people of the CNMI. “I've really committed to
this business. Right after the election, we decided to put up this bar and
grill. I needed to stay busy and I want to do a lot of things. This also
gives me an opportunity to serve people. But instead of being in politics,
I serve food,” he said.
